Preheat your oven to 350°F (175°C) to ensure it’s hot and ready for your cookies.
In a mixing bowl, combine the almond butter, large egg, and granulated sweetener. Use a whisk or spatula to mix until you achieve a smooth and creamy consistency.
Using a spoon or your hands, scoop out portions of the dough and roll them into balls. Place them on a baking sheet lined with parchment paper.
Gently flatten each cookie ball with the back of a fork or your palm.
Place the baking sheet in the preheated oven and bake for about 10-12 minutes, or until the edges are golden brown.
Once baked, remove the cookies from the oven and let them cool on the baking sheet for a few minutes before transferring them to a wire rack.
