30-Minute Ground Turkey Skillet with Vegetables

A quick one-pan skillet of ground turkey and mixed vegetables seasoned with turmeric and coconut aminos; optional spinach wilts in at the end.

  • 2 Tbspavocado oil
  • 1 lbground turkey
  • 1/2 tspground turmeric
  • 1/2 tspsea saltto taste
  • 3 stalks green onionchopped
  • 3 radisheschopped
  • 1 large crown broccolichopped
  • 1 large carrotpeeled and chopped
  • 3 Tbspcoconut aminosor liquid aminos
  • 1 huge handful baby spinachoptional

Method
 

Instructions
  1. Heat 2 Tbsp avocado oil in a large skillet over medium–medium-high heat.
  2. Add 1 lb ground turkey and press it into a single layer. Cook without stirring 2–3 minutes, until the bottom is browned. Flip the meat and cook another 2 minutes.
  3. Add 1/2 tsp ground turmeric and 1/2 tsp sea salt. Use a spatula to break the turkey into bite-sized pieces and continue cooking until mostly cooked through.
  4. Add 3 stalks chopped green onion, 3 chopped radishes, 1 large crown broccoli (chopped), and 1 large carrot (peeled and chopped). Stir to combine, cover the skillet, and cook 5–8 minutes until the vegetables have softened.
  5. Remove the cover, add 3 Tbsp coconut aminos and 1 huge handful baby spinach (optional). Replace the cover and cook 1–2 minutes, until the spinach wilts.
  6. Remove the cover, stir everything together, taste, and adjust seasoning with more sea salt and/or coconut aminos if desired.
  7. Serve as written, or spoon the skillet mixture over cooked sweet potato or rice.

Notes
