5-Ingredient Slow Cooker Balsamic Chicken

Tender shredded chicken cooked in a simple balsamic-salsa sauce for easy tacos, sandwiches, or bowls.

Ingredients
  

  • 2 pounds boneless skinless chicken breasts
  • 16 ounces chunky salsa
  • 1/2 cup balsamic vinegar
  • 2 medium cloves garlic minced, optional
  • salt to taste, optional

Equipment

  • Measuring cups and spoons
  • Knife
  • Cutting Board
  • forks (for shredding)
  • Spatula or spoon

Method
 

  1. Place the chicken breasts in the slow cooker in a single layer.
  2. Pour the chunky salsa and balsamic vinegar over the chicken.
  3. If using, sprinkle the minced garlic over the top.
  4. Cover and cook on low for 6 hours or on high for 4 hours, until the chicken is fully cooked and tender.
  5. Remove the chicken to a cutting board or bowl and shred with two forks.
  6. Return the shredded chicken to the slow cooker and stir to combine with the salsa-balsamic sauce.
  7. Season with salt to taste, if desired, and serve warm.

Notes

  • Great for tacos, burritos, or sandwiches.
  • Add garnishes like lettuce or cheese if desired.
  • Use cooked chicken juices from the slow cooker for extra flavor when mixing.
