In a mixing bowl, combine the cleaned baby potatoes with the lightly pounded garlic cloves. Drizzle with olive oil and sprinkle in the salt and black pepper. Toss until evenly coated.
Preheat your air fryer to 400°F (200°C). Once preheated, place the seasoned baby potatoes in the air fryer basket in a single layer. Cook for about 15-20 minutes, shaking the basket halfway through.
When the potatoes are golden and crispy, sprinkle the grated Parmesan cheese over the top. Return them to the air fryer and cook for an additional 5 minutes, or until the cheese is melted and slightly crisp.
Remove the potatoes from the air fryer and transfer them to a serving dish. Sprinkle the finely chopped parsley on top and enjoy warm!
