Preparation Steps:
  1. In a mixing bowl, combine the nonfat Greek yogurt, minced garlic, juice from half of the lemon, 1/2 tablespoon of Cajun seasoning, paprika, and dried herbs. Stir well until all the ingredients are blended together.
  2. Add the trimmed boneless chicken thighs to the marinade, ensuring each piece is generously coated. Cover the bowl with plastic wrap or transfer the chicken to a resealable bag. Let it marinate in the refrigerator for at least 30 minutes, or up to 2 hours for maximum flavor.
  3. Preheat your air fryer to 380°F (193°C) for about 5 minutes. This ensures that the chicken starts cooking immediately, resulting in a crispy exterior.
  4. Remove the chicken from the marinade, allowing any excess to drip off. Place the chicken thighs in the air fryer basket in a single layer, making sure they aren’t overcrowded. Sprinkle the remaining 1/2 tablespoon of Cajun seasoning on top.
  5. Cook the chicken thighs in the air fryer for 18-20 minutes, flipping them halfway through the cooking time. They should reach an internal temperature of 165°F (74°C) when done.
  6. Once the chicken is cooked, remove it from the air fryer and let it rest for 5 minutes. This helps the juices redistribute, keeping the chicken moist and tender.
