Instructions
Step 1: In a large bowl, combine the milk and pickle juice. Add the bite-sized chicken pieces to the mixture, ensuring they are all well-coated. Cover the bowl with plastic wrap and refrigerate for at least 1 hour, or ideally overnight.
Step 2: In another bowl, whisk together the all-purpose flour, powdered sugar, onion powder, salt, garlic powder, paprika, and pepper.
Step 3: In a separate small bowl, beat the egg. Dip each piece of marinated chicken into the egg mixture, then dredge in the seasoned flour mixture.
Step 4: Preheat your air fryer to 400°F (200°C) for about 5 minutes.
Step 5: Place the breaded chicken nuggets in the air fryer basket in a single layer. Lightly spray with cooking spray and cook for 10-12 minutes, flipping halfway through.
Step 6: Once cooked, remove the nuggets from the air fryer and let them cool for a few minutes. Serve warm with your favorite dipping sauces.
Notes
For an extra crunch, add a tablespoon of cornstarch to the flour mixture. For a gluten-free version, substitute all-purpose flour with a gluten-free flour blend.
