Instructions

  • Step 1: Preheat your air fryer to 350°F (175°C). In a large mixing bowl, combine the self-rising flour, granulated sugar, and salt. Mix well to ensure there are no clumps.
  • Step 2: Add the cold butter cubes to the flour mixture. Using a pastry cutter or your fingers, cut in the butter until the mixture resembles coarse crumbs.
  • Step 3: Gently stir in the buttermilk until just combined. Be careful not to overmix! You should have a shaggy dough that clings together.
  • Step 4: Flour your workspace and turn the dough out onto it. Gently knead the dough a few times until it comes together, then pat it into a rectangle about 1-inch thick. Cut out biscuits using a round cutter or a glass—about 2 to 3 inches in diameter works perfectly.
  • Step 5: In a separate bowl, mix together the smoked paprika, garlic powder, onion powder, salt, and pepper. Rub this spice mixture all over the chicken thighs, ensuring that each piece is well coated for maximum flavor.
  • Step 6: Lightly spray the air fryer basket with cooking spray or brush it with a bit of oil to prevent sticking. Place the seasoned chicken in the basket, ensuring there’s space between pieces for air circulation. Air fry for 15-18 minutes, flipping halfway through, until the chicken is cooked through and has an internal temperature of 165°F (74°C).
  • Step 7: Carefully remove the chicken and place the biscuit rounds in the air fryer basket. Air fry for 8-10 minutes until they are golden brown and flaky. Keep a close eye on them to avoid overcooking.
  • Step 8: Once both the chicken and biscuits have cooked, it’s time to assemble your sandwich. Split the biscuits in half, place a piece of chicken on the bottom half, and top with your favorite hot sauce or mayonnaise. Close the sandwich with the top half of the biscuit and enjoy!

Notes

Chill your butter before use for flaky layers. Don’t overwork the biscuit dough; handle it as little as possible to maintain tenderness.
