Preheat the air fryer to 400°F (204°C).
On a shallow plate, combine the flour, salt, and black pepper and set aside.
In a small bowl, whisk the two eggs until combined and set aside.
On a second shallow plate, mix the breadcrumbs, grated Parmesan, Italian seasoning, and garlic powder.
Working with one chicken piece at a time, dredge it in the seasoned flour, shake off excess, dip into the beaten eggs, then press into the breadcrumb mixture to coat thoroughly.
Place the coated chicken pieces in a single layer in the air fryer basket, leaving space between pieces; spray the basket lightly with nonstick spray if desired to prevent sticking.
Cook at 400°F for 10 minutes, flipping the chicken once halfway through.
Top each cooked chicken piece with about 1/4 cup marinara and 1/4 cup mozzarella, then return to the air fryer and cook 1 more minute or until the cheese is melted and internal temperature reaches 165°F (74°C).
Remove from the air fryer and garnish with fresh parsley if desired before serving.
