Ingredients

Zucchini

  • 3 medium Zucchini, sliced into ½-inch rounds

Oil

  • 1 tablespoon Olive oil

Coating

  • ½ cup Seasoned Panko bread crumbs
  • ¼ cup Grated Parmesan cheese
  • 1 teaspoon Onion powder
  • 1 teaspoon Garlic powder
  • ¼ teaspoon Salt

Garnish

  • Fresh parsley, finely chopped for garnish
  • Honey Sriracha Sauce for serving

Instructions

  • Step 1: Prepare the Zucchini - Wash the zucchini thoroughly, cut off the ends, and slice them into ½-inch rounds.
  • Step 2: Toss with Olive Oil - In a large mixing bowl, combine the sliced zucchini with olive oil and toss well.
  • Step 3: Mix the Coating Ingredients - In a separate bowl, combine Panko bread crumbs, Parmesan cheese, onion powder, garlic powder, and salt.
  • Step 4: Coat the Zucchini - Dip each zucchini slice into the breadcrumb mixture, ensuring both sides are well-coated.
  • Step 5: Preheat and Cook in the Air Fryer - Preheat the air fryer to 400°F (200°C) and arrange the coated zucchini slices in a single layer.
  • Step 6: Air Fry - Air fry the zucchini for about 10-12 minutes, flipping halfway through.
  • Step 7: Serve and Garnish - Remove from the air fryer, garnish with parsley, and serve with honey Sriracha sauce.

Notes

For an even crispier coating, spray the zucchini lightly with cooking spray before air frying. You can also use different cheeses or add seasonings for extra flavor.
