Ingredients

  • 1 large green plantain (ends trimmed and peeled; about 6 oz after peeling)
  • Olive oil spray (I like Bertolli)
  • 1 cup water
  • 1 teaspoon kosher salt
  • 3/4 teaspoon garlic powder

Equipment

  • Air Fryer
  • Sharp Knife
  • Cutting Board
  • Bowl
  • Measuring cups and spoons

Method

  1. Start by trimming the ends of the plantain and carefully peeling the skin off. Cut the plantain into 1-inch thick slices.
  2. In a bowl, combine the cut plantain slices with 1 cup of water, 1 teaspoon of kosher salt, and 3/4 teaspoon of garlic powder. Let them soak for about 10-15 minutes.
  3. Preheat your air fryer to 375°F (190°C). Remove the plantain slices from the water and pat them dry with a paper towel. Spray them lightly with olive oil on both sides. Place them in the air fryer basket in a single layer, cooking for 8 minutes, flipping halfway through.
  4. Once the plantains are cooked, allow them to cool for a minute. Using a flat-bottomed plate or a tostonera, gently smash each slice until they are about 1/2 inch thick.
  5. Return the smashed plantains to the air fryer basket. Spray them again with olive oil and air fry for an additional 5-7 minutes until they are golden and crispy.
  6. Remove the Air Fryer Tostones from the basket and let them cool slightly. Serve them warm, topped with your favorite dips or enjoy them plain.

Notes

  • Store leftovers in an airtight container in the refrigerator for up to 2 days.
  • Reheat in the air fryer to restore crispiness.
  • Feel free to customize with various toppings or dips.
