Instructions:
- Preheat your oven to 350°F (175°C).
- In a mixing bowl, combine the softened butter and sugar. Beat until light and fluffy (3-5 minutes).
- Mix in the almond extract until fully incorporated.
- In a separate bowl, whisk together the all-purpose flour, baking soda, and salt.
- Gradually add the flour mixture to the butter mixture, mixing until just combined.
- Scoop out portions of dough, roll into balls, and roll in additional white sugar.
- Place on a baking sheet lined with parchment paper and bake for 10-12 minutes.
- Let the cookies cool on a cooling rack.
- Prepare icing by mixing powdered sugar, 1/2 teaspoon almond extract, and 2-3 teaspoons of water.
- Drizzle icing over cooled cookies and sprinkle with toasted sliced almonds.
Notes
- These cookies can be frozen for up to three months.
- To soften dough, add a little more butter or a splash of milk.
- Substitute almond extract with vanilla extract if desired.
