Ingredients
  

For the Cookies:
  • 1 cup butter softened
  • 1 cup sugar
  • 1 teaspoon almond extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • Additional white sugar for rolling
  • 1 cup powdered sugar
  • 1/2 teaspoon almond extract for icing
  • 2-3 teaspoons water for icing
  • green food coloring (optional)
  • sliced almonds toasted, for garnish

Equipment

  • Cookie scoop or spoon

Method
 

Instructions:
  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine the softened butter and sugar. Beat until light and fluffy (3-5 minutes).
  3. Mix in the almond extract until fully incorporated.
  4. In a separate bowl, whisk together the all-purpose flour, baking soda, and salt.
  5. Gradually add the flour mixture to the butter mixture, mixing until just combined.
  6. Scoop out portions of dough, roll into balls, and roll in additional white sugar.
  7. Place on a baking sheet lined with parchment paper and bake for 10-12 minutes.
  8. Let the cookies cool on a cooling rack.
  9. Prepare icing by mixing powdered sugar, 1/2 teaspoon almond extract, and 2-3 teaspoons of water.
  10. Drizzle icing over cooled cookies and sprinkle with toasted sliced almonds.

Notes

  • These cookies can be frozen for up to three months.
  • To soften dough, add a little more butter or a splash of milk.
  • Substitute almond extract with vanilla extract if desired.
