  • 2 tablespoons pecans finely chopped
  • 1/2 cup maple vanilla almond butter
  • 1/2 cup gluten-free quick-cooking oats
  • 1/4 cup dried cranberries finely chopped
  • 2 tablespoons dried cranberries finely chopped
  • 1 pinch salt

Method
 

  1. Start by gathering all your ingredients. Chop the pecans and cranberries finely, as this will help with the texture of the energy balls.
  2. In a mixing bowl, combine the almond butter, gluten-free oats, and a pinch of salt. Stir until well combined.
  3. Next, fold in the finely chopped dried cranberries and pecans.
  4. Using your hands, scoop out about a tablespoon of the mixture and roll it into a ball. Repeat this process until all the mixture is used.
  5. Place the energy balls on a cookie sheet or tray lined with parchment paper. Refrigerate for at least 30 minutes to help them set.
  6. Once chilled, your Almond Energy Balls are ready to be enjoyed! Store them in an airtight container in the fridge.
