Ingredients

  • 3 large eggs
  • ¾ cup pure maple syrup
  • 2 tablespoons avocado oil
  • 2 teaspoons vanilla extract
  • 2 cups finely ground almond flour
  • ¾ cup tapioca flour
  • ½ cup raw cacao powder or cocoa powder
  • ½ teaspoon sea salt
  • 1 teaspoon ground cinnamon
  • 2 teaspoons baking powder
  • ½ cup chocolate chips (optional)

Equipment

  • Mixing Bowls
  • Whisk
  • Baking Pan
  • Parchment Paper
  • Measuring cups and spoons
  • Spatula

Method

  1. Step 1: Preheat the Oven. Begin by preheating your oven to 350°F (175°C). This ensures that your bread bakes evenly and rises beautifully.
  2. Step 2: Prepare Your Baking Pan. Line a loaf pan with parchment paper, allowing some overhang on the sides for easy removal after baking.
  3. Step 3: Mix Wet Ingredients. In a large mixing bowl, whisk together eggs, maple syrup, avocado oil, and vanilla extract until well combined and frothy.
  4. Step 4: Combine Dry Ingredients. In another bowl, sift together almond flour, tapioca flour, cacao powder, sea salt, ground cinnamon, and baking powder.
  5. Step 5: Combine Wet and Dry Ingredients. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  6. Step 6: Fold in Chocolate Chips. Gently fold chocolate chips into the batter with a spatula.
  7. Step 7: Pour the Batter into the Pan. Transfer the batter to your prepared loaf pan, spreading it evenly.
  8. Step 8: Bake. Place the loaf pan in your preheated oven and bake for 45-55 minutes, or until a toothpick inserted into the center comes out clean.
  9. Step 9: Cool and Serve. Once baked, let the bread cool in the pan for about 10 minutes, then transfer to a wire rack to cool completely.
