Almond Joy Brownie Bites

Ingredients
  

  • 1 box brownie mix (your favorite brand)
  • 2 large eggs
  • 1/3 cup vegetable oil
  • 1/2 cup mini chocolate chips
  • 1/2 cup sweetened condensed milk
  • 1 1/4 cup sweetened coconut flakes
  • 4 tbsp powdered sugar
  • 42 whole almonds

Method
 

  1. Preheat the oven to 350°F (175°C).
  2. In a large mixing bowl, combine the brownie mix, eggs, and vegetable oil. Mix until just combined and stir in mini chocolate chips.
  3. Grease your mini muffin tin lightly and spoon the brownie batter into each muffin cup, filling them about halfway.
  4. In another bowl, combine sweetened condensed milk, sweetened coconut flakes, and powdered sugar. Mix until well combined.
  5. Spoon a small amount of the coconut mixture on top of the brownie batter in each muffin cup and press it down gently.
  6. Place one whole almond on top of each coconut layer, pressing it in slightly.
  7. Bake for 15-18 minutes, or until a toothpick comes out with a few moist crumbs.
  8. Let the brownie bites cool in the pan for about 10 minutes before transferring to a wire rack to cool completely.

Notes

  • Store in an airtight container at room temperature for up to 3 days.
  • For longer storage, freeze in a freezer-safe container for up to 2 months.
  • Swap almonds for your favorite nuts, like walnuts or pecans.
