Ingredients
  

  • 4 cups riced cauliflower
  • 1 large egg
  • ½ cup shredded cheddar cheese
  • ½ cup shredded Parmesan cheese
  • ½ cup all-purpose flour
  • ½ grated onion
  • 1 clove garlic minced
  • 1 teaspoon salt
  • ½ teaspoon ground pepper

Method
 

  1. Begin by preheating your oven to 400°F (200°C).
  2. If using fresh cauliflower, chop it into florets and pulse in a food processor until rice-like. If using frozen riced cauliflower, thaw and drain well.
  3. In a large mixing bowl, combine the riced cauliflower, egg, shredded cheddar cheese, shredded Parmesan cheese, all-purpose flour, grated onion, minced garlic, salt, and ground pepper. Stir well.
  4. Using your hands, take small portions of the mixture and shape them into tot-like forms, about 1 to 2 inches in length. Place on a parchment-lined baking sheet.
  5. Bake in the preheated oven for about 20-25 minutes, or until golden brown and crispy, flipping halfway through.
  6. Remove from the oven and let cool for a few minutes. Serve warm with your favorite dipping sauce.

Notes

  • For gluten-free, substitute all-purpose flour with a gluten-free blend.
  • Use dairy-free cheese for a dairy-free version.
  • Add cayenne pepper or jalapeños for a spicy kick.
