  • 4 cups cold whole milk divided
  • 1/2 cup cornstarch
  • 1 teaspoon kosher salt
  • 1 teaspoon vanilla bean paste
  • 3 egg yolks
  • 3 tablespoons unsalted butter
  • 2/3 cup sugar
  • 1 cup powdered sugar for whipped cream topping
  • 1/2 cup creamy peanut butter
  • 1 9-inch cooked pie crust
  • 2 cups whipped cream

Method
 

Instructions:
  1. In a medium saucepan, combine 3 cups of cold whole milk, cornstarch, kosher salt, and vanilla bean paste. Whisk the mixture until smooth. Place the saucepan over medium heat and cook, stirring constantly, until the mixture thickens and starts to bubble. This should take about 5 to 7 minutes.
  2. In a separate bowl, whisk together the egg yolks and the remaining 1 cup of cold whole milk. Once the milk mixture in the saucepan is thick, slowly pour a small amount of it into the egg yolk mixture while whisking continuously. This process, known as tempering, prevents the egg yolks from scrambling. After combining, pour the tempered egg yolk mixture back into the saucepan.
  3. Continue cooking the mixture over medium heat, whisking constantly, for about 2 more minutes until it thickens further. Remove from heat and stir in the unsalted butter and sugar until fully incorporated.
  4. Once the mixture is smooth, stir in the creamy peanut butter until fully combined. The filling should be rich and velvety at this point.
  5. Pour the peanut butter filling into the pre-baked pie crust, smoothing the top with a spatula. Allow the pie to cool at room temperature for about 30 minutes, then refrigerate for at least 2 hours to set.
  6. Once the pie is set, prepare the whipped cream. In a mixing bowl, beat the heavy cream and powdered sugar until soft peaks form. Spread the whipped cream over the top of the pie, creating a beautiful layer of lightness.
  7. Slice the Amish Peanut Butter Pie into wedges and serve it chilled. Enjoy the creamy, dreamy flavors of this delightful dessert!
