  • 1 bunch green onion, chopped divided into greener and whiter parts
  • 1 medium bell pepper, diced for sweetness and color
  • 2 pieces hot dogs or chicken sausage
  • 2 pieces eggs, beaten
  • 2 cloves garlic, minced for aroma
  • 1 tablespoon ginger root, grated for zest
  • 1 cup cooked and shredded chicken leftovers work well
  • 4 cups pre-cooked, cold rice day-old preferred
  • 2-3 tablespoons soy sauce adjust to taste

Method
 

Cooking Steps:
  1. Step 1: Prepare Your Ingredients - Gather all your ingredients. Chop the green onions, dice the bell pepper, and shred the cooked chicken.
  2. Step 2: Heat the Oil - In your wok or large skillet, heat sesame oil over medium-high heat until shimmering.
  3. Step 3: Sauté the Aromatics - Add minced garlic and grated ginger to the hot oil, stirring for about 30 seconds until fragrant.
  4. Step 4: Cook the Vegetables - Toss in the chopped white parts of the green onion and diced bell pepper. Sauté for 2-3 minutes.
  5. Step 5: Add the Hot Dogs - Slice the hot dogs and add them to the pan. Cook for another 2-3 minutes.
  6. Step 6: Scramble the Eggs - Push the mixture to one side, pour in the beaten eggs, and scramble until just set.
  7. Step 7: Add the Chicken and Rice - Fold in the chicken and cold rice, breaking up any clumps.
  8. Step 8: Season It Up - Drizzle soy sauce over the mixture, stir, and cook for another 3-5 minutes.
  9. Step 9: Finish with Green Onions - Stir in the greener parts of the green onion and mix well.

Notes

  • Use day-old rice for the best texture.
  • Ensure your pan is hot enough to fry the rice.
  • Don’t overcrowd the pan; cook in batches if needed.
