- In a large bowl, combine the shredded chicken, mashed avocado, chopped cilantro, chopped red onion, and lime juice.
- Mix until the avocado is evenly distributed and the filling is creamy; season with salt and pepper to taste.
- Cut each croissant in half and divide the chicken–avocado mixture evenly among the 4 croissants (or spread over 8 slices of bread).
- Serve immediately.
Notes
- Use cooked shredded chicken from a rotisserie for convenience.
- Adjust lime juice and salt to taste.
- For firmer filling, chill briefly before assembling.
