Avocado Chicken Croissants

A quick, creamy avocado and shredded chicken filling piled into buttery croissants for an easy lunch or light dinner.

Ingredients
  

  • 2 chicken breasts (cooked and shredded) I used the breast from a roasted chicken
  • 1 avocado mashed
  • 1/4 cup cilantro chopped
  • 1/2 small red onion chopped
  • 1 tablespoon lime juice
  • salt and pepper to taste
  • 4 croissants cut in half (or use 8 slices of bread)

Equipment

  • Large Bowl
  • fork or spoon
  • Knife
  • Cutting Board

Method
 

  1. In a large bowl, combine the shredded chicken, mashed avocado, chopped cilantro, chopped red onion, and lime juice.
  2. Mix until the avocado is evenly distributed and the filling is creamy; season with salt and pepper to taste.
  3. Cut each croissant in half and divide the chicken–avocado mixture evenly among the 4 croissants (or spread over 8 slices of bread).
  4. Serve immediately.

Notes

  • Use cooked shredded chicken from a rotisserie for convenience.
  • Adjust lime juice and salt to taste.
  • For firmer filling, chill briefly before assembling.
