Instructions
Step 1: Preheat your oven to 375°F (190°C).
Step 2: In a skillet over medium heat, cook the chopped bacon until crispy, about 5-7 minutes. Transfer to a paper towel-lined plate.
Step 3: Prepare the jalapenos by cutting off the tops, removing the seeds, and mincing them finely.
Step 4: In a large mixing bowl, combine the cooked bacon, minced jalapenos, and diced mozzarella cheese. Stir until well mixed.
Step 5: Open the can of refrigerated biscuit dough and separate each biscuit. Flatten each biscuit into a circle, roughly 4 inches in diameter.
Step 6: Place a generous spoonful of the bacon and jalapeno mixture in the center of each flattened biscuit. Fold the edges of the dough up and around the filling, pinching at the top to seal completely.
Step 7: Place the filled cheese bombs seam-side down on a baking sheet lined with parchment paper. Bake for 15-20 minutes or until golden brown.

For added flavor, consider adding shredded cheddar cheese to the filling. These cheese bombs can also be frozen before baking.
