Instructions
Preheat your oven to 350°F (175°C). In a large skillet over medium heat, cook the bacon until crispy, about 8-10 minutes. Remove and drain on paper towels.
In the same skillet, drain most of the bacon grease, leaving about a tablespoon. Sauté the diced jalapenos over medium heat for 3-4 minutes until slightly softened.
In a large mixing bowl, combine softened cream cheese and mayonnaise until smooth. Stir in sautéed jalapenos and crispy bacon, then fold in shredded cheddar cheese, reserving some for topping.
Transfer the mixture to a baking dish and top with reserved cheddar cheese. Bake for 20-25 minutes until hot and bubbly.
Let cool for a few minutes before serving warm with tortilla chips, crackers, or fresh vegetables.
Notes
For a spicier dip, leave some seeds in the jalapenos. This dip can be made ahead of time and stored in the refrigerator for up to 2 days before baking.
