Bacon Jalapeno Popper Dip

  • 6 slices Bacon, cut into 1/2-inch pieces
  • 5 Jalapenos, seeded and diced
  • 3/4 cup Mayonnaise
  • 12 ounces Cream cheese, softened
  • 2 cups Shredded cheddar cheese

Instructions

  • Preheat your oven to 350°F (175°C). In a large skillet over medium heat, cook the bacon until crispy, about 8-10 minutes. Remove and drain on paper towels.
  • In the same skillet, drain most of the bacon grease, leaving about a tablespoon. Sauté the diced jalapenos over medium heat for 3-4 minutes until slightly softened.
  • In a large mixing bowl, combine softened cream cheese and mayonnaise until smooth. Stir in sautéed jalapenos and crispy bacon, then fold in shredded cheddar cheese, reserving some for topping.
  • Transfer the mixture to a baking dish and top with reserved cheddar cheese. Bake for 20-25 minutes until hot and bubbly.
  • Let cool for a few minutes before serving warm with tortilla chips, crackers, or fresh vegetables.

Notes

For a spicier dip, leave some seeds in the jalapenos. This dip can be made ahead of time and stored in the refrigerator for up to 2 days before baking.
