- Preheat the oven to 425°F. Lightly spray a 9×13-inch baking dish with non-stick cooking spray.
- Trim any excess fat from the 1 pound boneless, skinless chicken breasts, then cut into 1-inch cubes. Place the cubed chicken in a medium mixing bowl.
- Add 1 Tablespoon olive oil, 1 teaspoon salt, 1/4 teaspoon ground black pepper, 1/4 teaspoon paprika, 1/2 teaspoon garlic powder, and 1 teaspoon Italian seasoning to the bowl. Toss the chicken until all pieces are evenly coated.
- Transfer the seasoned chicken to the prepared baking dish and spread into a single layer.
- Dot the chicken with the 2 Tablespoons butter (diced) so the butter is distributed over the top.
- Bake in the preheated oven for 15–20 minutes, stirring gently once about halfway through baking to redistribute the butter. Chicken is done when the internal temperature reaches 165°F or no pink remains in the center.
- Remove from the oven, let rest for 3–5 minutes, then garnish with fresh chopped parsley and serve.
