Preheat your oven to 400°F (200°C).
Cut the chicken into nugget-sized pieces, about 1 to 2 inches.
In one bowl, beat the eggs. In another bowl, mix the breadcrumbs, Parmesan cheese, garlic powder, onion powder, paprika, salt, and pepper.
Dip each chicken piece in the eggs, then coat with the breadcrumb mixture and place on a baking sheet.
Lightly spray the nuggets with cooking spray and bake for 15-20 minutes, flipping halfway through.
