Instructions:
- In a mixing bowl, combine the chipotle peppers, adobo sauce, chicken broth, maple syrup, olive oil, chili powder, minced garlic, ground cumin, dried oregano, and kosher salt. Use a whisk to blend everything until smooth.
- Place the chicken breasts in a baking dish and pour the marinade over them, ensuring each piece is well coated. Cover and let it marinate in the fridge for at least 30 minutes.
- Preheat your oven to 400°F (200°C).
- Remove the chicken from the marinade, place it in the baking dish, and pour the leftover marinade over the top. Bake for about 25-30 minutes, or until the internal temperature reaches 165°F (74°C).
- Once cooked, remove the chicken from the oven and let it rest for about 5 minutes.
- Slice the chicken and serve it with your favorite sides.
Notes
- For a different smoky flavor, substitute chipotle peppers with smoked paprika.
- Maple syrup can be swapped with agave nectar for extra sweetness.
- Store leftovers in an airtight container in the refrigerator for up to 4 days.
