Ingredients
  

For the Marinade:
  • 2 chipotle peppers (from 1 can of chipotle peppers in adobo sauce)
  • 1 cup adobo sauce (from 1 can of chipotle peppers in adobo sauce)
  • 1 cup chicken broth (or water)
  • 1 tablespoon maple syrup (or honey)
  • 2 tablespoons olive oil
  • 1 tablespoon chili powder
  • 3 cloves garlic (minced)
  • 1 teaspoon ground cumin
  • 1 teaspoon dried oregano
  • 1 teaspoon kosher salt
For the Chicken:
  • 4 boneless, skinless chicken breasts

Method
 

Instructions:
  1. In a mixing bowl, combine the chipotle peppers, adobo sauce, chicken broth, maple syrup, olive oil, chili powder, minced garlic, ground cumin, dried oregano, and kosher salt. Use a whisk to blend everything until smooth.
  2. Place the chicken breasts in a baking dish and pour the marinade over them, ensuring each piece is well coated. Cover and let it marinate in the fridge for at least 30 minutes.
  3. Preheat your oven to 400°F (200°C).
  4. Remove the chicken from the marinade, place it in the baking dish, and pour the leftover marinade over the top. Bake for about 25-30 minutes, or until the internal temperature reaches 165°F (74°C).
  5. Once cooked, remove the chicken from the oven and let it rest for about 5 minutes.
  6. Slice the chicken and serve it with your favorite sides.

Notes

  • For a different smoky flavor, substitute chipotle peppers with smoked paprika.
  • Maple syrup can be swapped with agave nectar for extra sweetness.
  • Store leftovers in an airtight container in the refrigerator for up to 4 days.
