Ingredients
  

Tomatoes
  • 6 medium Roma tomatoes Ripe and fresh for best flavor.
Seasoning
  • 2 tablespoons Olive oil
  • 1 teaspoon Garlic powder
  • 1 teaspoon Italian seasoning
  • 0.5 teaspoon Salt
  • 0.5 teaspoon Pepper
Cheese and Herbs
  • 1.5 cups Parmesan cheese, freshly shredded For best flavor and texture.
  • 2 tablespoons Fresh basil, minced
  • 2 tablespoons Fresh parsley, minced

Method
 

  1. Step 1: Preheat your oven to 375°F (190°C). Rinse the Roma tomatoes under cool water, pat them dry, cut in half lengthwise, and scoop out some seeds and pulp.
  2. Step 2: In a small bowl, combine olive oil, garlic powder, Italian seasoning, salt, and pepper. Brush or drizzle this mixture over the cut sides of each tomato.
  3. Step 3: In another bowl, mix Parmesan cheese, minced basil, and minced parsley. Fill each tomato half with this mixture.
  4. Step 4: Place the stuffed tomatoes on a baking sheet lined with parchment paper. Bake for about 20-25 minutes until golden brown and tender.
  5. Step 5: Remove from the oven, let cool for a few minutes, and serve warm as a side dish or appetizer.

Notes

Use freshly shredded Parmesan for best results. Allow tomatoes to cool slightly before serving to maintain their shape.
