- Step 1: Preheat your oven to 375°F (190°C). Rinse the Roma tomatoes under cool water, pat them dry, cut in half lengthwise, and scoop out some seeds and pulp.
- Step 2: In a small bowl, combine olive oil, garlic powder, Italian seasoning, salt, and pepper. Brush or drizzle this mixture over the cut sides of each tomato.
- Step 3: In another bowl, mix Parmesan cheese, minced basil, and minced parsley. Fill each tomato half with this mixture.
- Step 4: Place the stuffed tomatoes on a baking sheet lined with parchment paper. Bake for about 20-25 minutes until golden brown and tender.
- Step 5: Remove from the oven, let cool for a few minutes, and serve warm as a side dish or appetizer.
Notes
Use freshly shredded Parmesan for best results. Allow tomatoes to cool slightly before serving to maintain their shape.
