Ingredients

Tomatoes

  • 6 medium Roma tomatoes

Seasoning and Toppings

  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • ½ teaspoon salt
  • ½ teaspoon pepper
  • 1.5 cups parmesan cheese, freshly shredded
  • 2 tablespoons fresh basil, minced
  • 2 tablespoons fresh parsley, minced

Instructions

  • Step 1: Preheat your oven to 400°F (200°C).
  • Step 2: Rinse the Roma tomatoes under cool water and pat them dry. Slice each tomato in half lengthwise and scoop out some seeds.
  • Step 3: In a mixing bowl, combine olive oil, garlic powder, Italian seasoning, salt, and pepper. Brush this mixture onto the cut sides of each tomato half.
  • Step 4: Fill each tomato half generously with freshly shredded parmesan cheese.
  • Step 5: Arrange the stuffed tomatoes in a baking dish, cut side up, and bake for about 20 minutes until the cheese is bubbly and golden brown.
  • Step 6: Remove from the oven, let cool for a few minutes, and sprinkle with minced basil and parsley before serving.

Notes

Choose ripe tomatoes for the best flavor. You can mix breadcrumbs with the parmesan for added texture.
