  • 20 ounces Pineapple tidbits, drained (1 can)
  • ½ cup Chicken stock
  • 2 tablespoons Soy sauce
  • 2 tablespoons Sesame oil
  • 2 tablespoons Brown sugar
  • 2 tablespoons Cornstarch
  • 1 teaspoon Garlic powder
  • 1 tablespoon Olive oil
  • ½ small Yellow onion, peeled and diced
  • 8 pieces Boneless skinless chicken thighs
  • Salt and pepper to taste
  • Fresh parsley, chopped for garnish
  • Green onions, thinly sliced for garnish

Instructions

  • Step 1: Preheat your oven to 400°F (200°C). Wash and pat dry the chicken thighs, then season with salt and pepper.
  • Step 2: In a medium bowl, combine pineapple tidbits, chicken stock, soy sauce, sesame oil, brown sugar, garlic powder, and cornstarch. Whisk until smooth.
  • Step 3: Heat olive oil in a large oven-proof skillet over medium heat. Sauté diced onions until translucent, about 2–3 minutes.
  • Step 4: Push onions to the side and add chicken thighs. Sear for 3–4 minutes on each side until golden brown.
  • Step 5: Pour the pineapple sauce over the chicken, ensuring it is well-coated. Bring to a gentle simmer.
  • Step 6: Transfer the skillet to the oven and bake for 25–30 minutes until chicken reaches 165°F (75°C).
  • Step 7: Remove from oven, let rest, and garnish with parsley and green onions. Serve with rice or vegetables.

Notes

For extra flavor, marinate chicken in the sauce for a few hours. You can also add vegetables like bell peppers for a complete meal.
