Instructions
Step 1: Preheat your oven to 400°F (200°C). Wash and pat dry the chicken thighs, then season with salt and pepper.
Step 2: In a medium bowl, combine pineapple tidbits, chicken stock, soy sauce, sesame oil, brown sugar, garlic powder, and cornstarch. Whisk until smooth.
Step 3: Heat olive oil in a large oven-proof skillet over medium heat. Sauté diced onions until translucent, about 2–3 minutes.
Step 4: Push onions to the side and add chicken thighs. Sear for 3–4 minutes on each side until golden brown.
