- Preheat the oven to 400°F and place a rack in the center position.
- In a bowl, place the 2 pounds sea scallops. Season with salt and pepper to taste.
- Add 1 tablespoon minced fresh thyme and 1/2 cup buttermilk to the scallops and toss gently to coat.
- Transfer the scallops and any remaining buttermilk to an oven-proof casserole dish, arranging the scallops in a single layer if possible.
- Evenly cover the scallops with 20 hand-crushed Ritz Crackers.
- Drizzle the 1/4 cup melted butter evenly over the cracker topping.
- Bake in the preheated oven for 20 minutes, until the cracker topping is golden and the scallops are opaque and cooked through.
- Remove from the oven, squeeze the juice of 1 lemon over the scallops, and serve immediately.
