  • 2 tablespoons maple syrup
  • 1 teaspoon pure vanilla extract optional

  • 1.5 teaspoons ground cinnamon
  • 0.25 teaspoon ground nutmeg optional
  • 1 teaspoon baking powder
  • 0.5 teaspoon salt
  • sliced bananas for topping

Method
 

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, mash the ripe bananas until smooth. Add the slightly beaten eggs, unsweetened almond milk, maple syrup, and vanilla extract (if using). Whisk until everything is well combined.
  3. In a separate bowl, mix the rolled oats, ground cinnamon, ground nutmeg (if using), baking powder, and salt. Stir until evenly distributed.
  4. Gradually add the dry ingredient mixture to the wet ingredients, stirring until just combined.
  5. Pour the oatmeal mixture into a greased baking dish. Spread it out evenly, and top with sliced bananas.
  6. Place the baking dish in the preheated oven and bake for about 30-35 minutes, or until the top is golden brown and a toothpick inserted in the center comes out clean.
  7. Once baked, remove from the oven and let it cool for a few minutes. Serve warm, topped with yogurt and maple syrup if desired.
