Instructions
Step 1: In a large mixing bowl, beat the eggs lightly. Add milk, melted butter, and vanilla extract. Stir until smooth.
Step 2: In a separate bowl, whisk together flour, brown sugar, baking powder, cinnamon, and salt until evenly mixed.
Step 3: Slowly add the dry ingredients to the wet mixture, folding gently until just combined.
Step 4: Fold in the chopped bananas until evenly distributed.
Step 5: Heat about 1 inch of vegetable oil in a skillet over medium-high heat. Test oil with a small amount of batter.
Step 6: Drop small amounts of batter into the hot oil, frying for 2-3 minutes on each side until golden brown. Drain on paper towels.
Step 7: Serve warm, dusted with powdered sugar or drizzled with honey.
Notes
Ensure bananas are very ripe for maximum sweetness. Experiment with spices for added flavor.
