Ingredients
  

  • 1/3 cup butter softened
  • 1 1/4 cups white sugar
  • 2 eggs
  • 4 large very ripe bananas mashed
  • 1 cup sour cream
  • 1 tsp vanilla extract
  • 2 1/2 cups all-purpose flour or white whole wheat
  • 1 tsp cinnamon
  • 2 tsp baking soda
  • 1/2 tsp salt
  • 1 cup walnuts chopped

Method
 

  1. Preheat your oven to 350°F (175°C).
  2. Cream together the softened butter and white sugar until light and fluffy.
  3. Add the eggs one at a time, mixing well after each addition. Fold in the mashed bananas.
  4. Pour in the sour cream and vanilla extract, stirring until smooth.
  5. In a separate bowl, whisk together the flour, cinnamon, baking soda, and salt. Gradually add to the wet ingredients, stirring gently.
  6. Fold in the chopped walnuts.
  7. Grease your loaf pan and pour in the batter, smoothing the top.
  8. Bake for 60 to 70 minutes, or until a toothpick comes out clean.
  9. Let cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.

Notes

  • Store in an airtight container at room temperature for up to 3 days.
  • Freeze slices wrapped in plastic for up to 3 months.
  • Reheat slices in the microwave for 15-20 seconds.
