Preparation Steps
  1. Step 1: Preheat your oven to 350°F (175°C) to ensure even baking.
  2. Step 2: Line a muffin tin with parchment paper liners or grease each cup with coconut oil.
  3. Step 3: In a large mixing bowl, combine the dry ingredients: white whole-wheat flour, baking powder, baking soda, salt, cinnamon, and wheat bran. Whisk together until well blended.
  4. Step 4: In a separate bowl, mash the very ripe bananas until smooth.
  5. Step 5: Add the whipped eggs, Greek yogurt, molasses (if using), vanilla extract, and melted coconut oil to the mashed bananas. Stir until combined.
  6. Step 6: Pour the wet mixture into the dry ingredients and gently fold together until just combined.
  7. Step 7: Fold in the walnut pieces.
  8. Step 8: Scoop the batter into the muffin tin, filling each cup about two-thirds full.
  9. Step 9: Bake for 20-25 minutes, or until a toothpick comes out clean.
  10. Step 10: Let muffins cool in the tin for 5 minutes before transferring to a wire rack.

Notes

  • Ensure bananas are very ripe for maximum sweetness.
  • Do not skip the salt; it balances the flavors.
  • Store leftovers in an airtight container to maintain freshness.
