  • 2 eggs slightly beaten

  • 1 teaspoon vanilla extract

Method
 

  1. Step 1: Preheat your oven to 350°F (175°C). This ensures that your cake bakes evenly.
  2. Step 2: Grease your baking pan with butter or non-stick spray to prevent sticking. You can also line the bottom with parchment paper for easy removal.
  3. Step 3: In a large mixing bowl, whisk together the all-purpose flour, baking powder, baking soda, and granulated sugar until well combined.
  4. Step 4: In another bowl, use your electric mixer to cream the softened butter until it’s light and fluffy. Gradually add the dry mixture to the butter, mixing until crumbly.
  5. Step 5: Add the slightly beaten eggs, buttermilk, and vanilla extract to the mixture. Mix until just combined; be careful not to overmix.
  6. Step 6: Fold in your homemade Berry Sauce gently into the batter, ensuring it’s evenly distributed but not completely mixed in, creating a marbled effect.
  7. Step 7: Pour the batter into your prepared baking pan, smoothing the top with a spatula.
  8. Step 8: Bake in the preheated oven for 30-35 minutes, or until a toothpick inserted in the center comes out clean.
  9. Step 9: Once baked, remove the coffee cake from the oven and allow it to cool in the pan for 10 minutes before transferring it to a cooling rack. Serve warm or at room temperature.
