Ingredients
  

  • 1 lb ground beef
  • 1 Tbs taco seasoning
  • 1 cup water plus a few tablespoons
  • 1 cup refried beans
  • 1 teaspoon vegetable oil
  • 1 cup queso blanco
  • 2 Tbs pico de gallo

Method
 

  1. In a large skillet, heat the vegetable oil over medium heat. Once hot, add the ground beef and cook until browned, breaking it apart with a wooden spoon. This should take about 5-7 minutes.
  2. Once the beef is cooked, sprinkle in the taco seasoning and stir to combine. Pour in 1 cup of water and let it simmer for 5 minutes until the mixture thickens slightly.
  3. Reduce the heat to low and stir in the refried beans until fully combined. If the mixture is too thick, add a few tablespoons of water to reach your desired consistency.
  4. Next, add the queso blanco to the skillet. Stir continuously until the cheese is melted and the mixture is creamy and smooth.
  5. Once everything is well combined, remove the skillet from heat and transfer the dip to a serving dish. Top with fresh pico de gallo for an extra burst of flavor and color.
