Ingredients

Ingredients
  • 1 large head cauliflower (cut into bite-sized florets, about 7-8 cups)
  • 3 tablespoons extra virgin olive oil
  • 1 teaspoon yellow curry powder (optional)
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/4 teaspoon garlic powder

Equipment

  • Large baking sheet
  • Mixing Bowl
  • Spatula or spoon
  • Oven mitts

Method

Instructions
  1. Step 1: Preheat the Oven - Start by preheating your oven to 425°F (220°C). A hot oven is essential for achieving that crispy texture.
  2. Step 2: Prepare the Cauliflower - Cut the large head of cauliflower into bite-sized florets, ensuring they are roughly the same size for even cooking.
  3. Step 3: Toss with Oil and Seasonings - In a large mixing bowl, combine the cauliflower florets with the extra virgin olive oil, yellow curry powder (if using), salt, pepper, and garlic powder. Toss well until all the florets are evenly coated.
  4. Step 4: Spread on the Baking Sheet - Transfer the seasoned cauliflower to a large baking sheet. Spread the florets out in a single layer, giving them enough space to roast without steaming.
  5. Step 5: Roast the Cauliflower - Place the baking sheet in the preheated oven and roast for about 25-30 minutes. Halfway through, give the cauliflower a good stir to ensure even browning.
  6. Step 6: Check for Doneness - The cauliflower is ready when it’s tender and has golden, crispy edges. If you like it extra crispy, leave it in the oven for an additional 5 minutes.
  7. Step 7: Serve and Enjoy! - Remove the baking sheet from the oven and let it cool for a few minutes. Serve the roasted cauliflower warm, garnished with fresh herbs if desired.

Notes

  • For added flavor, try sprinkling the cauliflower with fresh herbs, such as parsley or cilantro, just before serving.
  • If you enjoy a bit of heat, consider adding a pinch of cayenne pepper or chili powder to the seasoning mix.
  • Don't overcrowd the baking sheet; this will ensure even roasting and prevent steaming.
  • For a unique twist, try adding nutritional yeast for a cheesy flavor without dairy.
