Ingredients

  • 1 whole chicken (about 2-3 lbs)
  • 1 tbsp olive oil
  • 1.5 tbsp BBQ seasoning (any BBQ dry rub or poultry seasoning)

Equipment

  • Traeger Grill
  • Meat Thermometer
  • Cutting Board
  • Sharp Knife

Method

  1. Start by rinsing the chicken under cold water and patting it dry with paper towels. This helps achieve that crispy skin that we all crave.
  2. Rub the chicken with olive oil, ensuring that it’s evenly coated. This step not only helps the seasoning adhere better but also contributes to the overall moisture of the chicken.
  3. Sprinkle the BBQ seasoning over the entire chicken, making sure to rub it in well. Don’t forget to season the cavity of the bird for added flavor!
  4. While you’re prepping, turn on your Traeger grill and set it to 225°F. This low and slow cooking method will infuse your chicken with that irresistible smoky flavor.
  5. Once the grill is preheated, place the chicken directly on the grill grates, breast side up. Close the lid and let it smoke for about 3 to 4 hours, or until the internal temperature reaches 165°F in the thickest part of the breast.
  6. Once your chicken reaches the desired temperature, carefully remove it from the grill and let it rest for at least 15 minutes. This allows the juices to redistribute, ensuring every slice is juicy and flavorful. Now, carve and serve your amazing smoked chicken!

Notes

  • Use skinless chicken for a lower-fat option.
  • Opt for a lighter BBQ seasoning or make your own with herbs and spices.
  • Store leftovers in an airtight container in the refrigerator for up to 4 days.
