Ingredients
  

For the Taco Lasagna:
  • 12 each flour or corn tortillas (8-inch)
  • 1 can black or pinto beans (15 ounces, rinsed and drained)
  • 2 cans refried beans (16 ounces each)
  • 3 cups shredded Mexican cheese blend
  • 1.5 pounds ground beef
  • 1 small onion (finely diced)
  • 6 cloves garlic (minced)
  • 1 each green bell pepper (finely diced)
  • 1 can diced green chiles (7 ounces)
  • 3 cups salsa
  • 2 tablespoons taco seasoning
  • to taste Salt and pepper
  • 2 tablespoons cornstarch
  • 4 tablespoons water
  • 1 cup salsa (for topping)
  • 1 cup shredded Mexican cheese blend (for topping)

Method
 

Instructions
  1. Preheat your oven to 350°F (175°C) to ensure even cooking.
  2. In a large skillet over medium heat, cook the ground beef, diced onion, minced garlic, and green bell pepper until the beef is browned and the vegetables are tender, about 5-7 minutes. Drain excess fat.
  3. Stir in the diced green chiles, taco seasoning, and season with salt and pepper. Cook for another 2-3 minutes until well combined.
  4. In a small bowl, mix cornstarch and water until smooth. Add to the skillet with 3 cups of salsa. Stir well and simmer for about 5 minutes to thicken.
  5. In your baking dish, layer: a thin layer of beef mixture, 3 tortillas, refried beans, a sprinkle of black or pinto beans, and a layer of shredded cheese. Repeat until all ingredients are used, finishing with tortillas topped with remaining salsa and cheese.
  6. Cover with foil and bake for 25 minutes. Remove foil and bake for an additional 15 minutes, until cheese is bubbly and golden.
  7. Let cool for 10 minutes before slicing. Serve warm with toppings like sour cream, avocado, or cilantro.

Notes

  • Use leftover taco meat for quicker prep.
  • Add jalapeños or olives for extra flavor.
  • This recipe can be doubled for larger gatherings.
