Ingredients

For the Crust:
  • 8.8 oz Biscoff cookies
  • 3 tbsp butter melted
For the Filling:
  • 1 large banana sliced into discs
  • 2 packages instant banana cream pudding mix (3.4 oz each)
  • 2 cups cold milk
  • 1.5 cups heavy whipping cream
  • 3 tbsp powdered sugar

Equipment

  • Food Processor
  • Mixing Bowls
  • Whisk
  • 9-inch pie dish
  • Rubber spatula

Method

How to Prepare Biscoff Banana Cream Pie:
  1. Step 1: Prepare the Biscoff Cookie Crust. Preheat your oven to 350°F (175°C). In a food processor, pulse the Biscoff cookies until fine crumbs. Combine cookie crumbs with melted butter in a mixing bowl and mix until coated. Press into a 9-inch pie dish. Bake for 10 minutes and let cool completely.
  2. Step 2: Make the Banana Cream Filling. In a large mixing bowl, whisk together the instant banana cream pudding mix and cold milk until thickened (about 2 minutes). Set aside.
  3. Step 3: Slice the Bananas. Slice the banana into discs, about ¼ inch thick.
  4. Step 4: Assemble the Pie. Layer half of the banana slices over the cooled crust. Pour the banana pudding mixture on top, spreading evenly. Add the remaining banana slices on top.
  5. Step 5: Whip the Cream. In another mixing bowl, whip the heavy cream and powdered sugar until stiff peaks form (3-5 minutes).
  6. Step 6: Top the Pie. Spread the whipped cream over the banana layer, creating swirls or peaks for decoration.
  7. Step 7: Chill and Serve. Cover with plastic wrap and refrigerate for at least 4 hours or overnight before serving.

Notes

  • For a festive touch, sprinkle cinnamon or nutmeg in the filling.
  • Store leftovers covered in the refrigerator for up to 3-4 days.
  • To prevent banana browning, toss slices in lemon juice before layering.
