  • 1 teaspoon pepper
  • Blue cheese (for topping)

Equipment

  • Cast iron skillet or grill pan
  • Instant-read meat thermometer
  • Tongs
  • Plate

Method

Cooking Instructions:
  1. Step 1: Prepare Your Steak - Take your thick-cut steaks out of the refrigerator about 30 minutes before cooking to reach room temperature.
  2. Step 2: Season Generously - Pat the steaks dry, drizzle with olive oil, and season with coarse salt and pepper.
  3. Step 3: Heat the Skillet - Preheat your skillet on high heat for about 5 minutes until sizzling.
  4. Step 4: Sear the Steaks - Place the steaks in the hot skillet and cook for 4-5 minutes until a dark crust forms.
  5. Step 5: Flip and Cook - Flip the steaks and cook for another 3-4 minutes. Use a thermometer to check for medium-rare (130°F).
  6. Step 6: Add the Blue Cheese - Crumble blue cheese on each steak in the last minute of cooking and cover to melt slightly.
  7. Step 7: Rest and Serve - Let the steaks rest for at least 5 minutes before slicing and serving.

Notes

  • Experiment with different cuts of steak like ribeye or sirloin.
  • Try gorgonzola or feta cheese if blue cheese isn't preferred.
  • Add fresh herbs for extra flavor.
  • Consider adding cayenne pepper for a spicy kick.
