Directions:
- Step 1: Preheat your oven to 350°F (175°C). This ensures your donuts bake evenly and come out perfectly fluffy.
- Step 2: Lightly grease your donut pan with cooking spray or a little coconut oil to prevent sticking.
- Step 3: In a large mixing bowl, combine the oat flour, coconut sugar, baking powder, cinnamon, and salt. Whisk them together until well blended.
- Step 4: In another bowl, mix the milk, flax egg (or regular egg), vanilla extract, almond butter, and Greek yogurt. Whisk until smooth and creamy.
- Step 5: Pour the wet ingredients into the bowl of dry ingredients. Stir gently with a spoon or spatula until just combined. Be careful not to overmix; a few lumps are okay!
- Step 6: Using a spoon or a piping bag, carefully fill each donut cavity about 3/4 full with the batter.
- Step 7: Place the donut pan in the preheated oven and bake for 12-15 minutes, or until the donuts spring back when touched and a toothpick inserted into the center comes out clean.
- Step 8: Once baked, remove the donuts from the oven and let them cool in the pan for about 5 minutes. Then, transfer to a cooling rack to cool completely.
- Step 9: Once the donuts are cool, sprinkle them with confectioners' sugar for a sweet finishing touch.
Notes
- For a vegan version, use a flax egg and plant-based yogurt.
- Store in an airtight container at room temperature for up to 3 days.
- Try adding seasonal flavors like pumpkin or berries for variety.
