Ingredients
  

For the Donuts:
  • 2 cups oat flour (ground from rolled oats for a wholesome base)
  • 1/4 cup coconut sugar (for natural sweetness)

  • 6 tablespoons almond butter (or any nut butter you love)
  • 1/2 cup Greek yogurt (for creaminess and protein)

Method
 

Directions:
  1. Step 1: Preheat your oven to 350°F (175°C). This ensures your donuts bake evenly and come out perfectly fluffy.
  2. Step 2: Lightly grease your donut pan with cooking spray or a little coconut oil to prevent sticking.
  3. Step 3: In a large mixing bowl, combine the oat flour, coconut sugar, baking powder, cinnamon, and salt. Whisk them together until well blended.
  4. Step 4: In another bowl, mix the milk, flax egg (or regular egg), vanilla extract, almond butter, and Greek yogurt. Whisk until smooth and creamy.
  5. Step 5: Pour the wet ingredients into the bowl of dry ingredients. Stir gently with a spoon or spatula until just combined. Be careful not to overmix; a few lumps are okay!
  6. Step 6: Using a spoon or a piping bag, carefully fill each donut cavity about 3/4 full with the batter.
  7. Step 7: Place the donut pan in the preheated oven and bake for 12-15 minutes, or until the donuts spring back when touched and a toothpick inserted into the center comes out clean.
  8. Step 8: Once baked, remove the donuts from the oven and let them cool in the pan for about 5 minutes. Then, transfer to a cooling rack to cool completely.
