Ingredients
  

For the Crust:
  • 1 medium head broccoli cut into florets (about 16 ounces with center stem, 12 ounces florets)
  • 2 large eggs
  • ¾ cup freshly grated Parmesan cheese
  • 2 tablespoons nutritional yeast or another 1 tablespoon Parmesan
  • 1 cup shredded part-skim mozzarella cheese
  • 1 teaspoon Italian seasoning
  • ½ teaspoon kosher salt
  • ½ cup pizza sauce (homemade or good quality store-bought)
  • 4 ounces part-skim mozzarella sliced, shredded, or roughly torn into small pieces
  • Pizza toppings of choice (I kept it classic with sautéed cherry tomatoes)
  • Thinly sliced fresh basil (optional but delicious)

Method
 

Instructions:
  1. Step 1: Steam the broccoli until tender, about 5-7 minutes.
  2. Step 2: Drain the broccoli thoroughly and let it cool for a few minutes.
  3. Step 3: Process the cooled broccoli in a food processor until finely chopped.
  4. Step 4: In a mixing bowl, combine the processed broccoli with eggs, Parmesan cheese, nutritional yeast, mozzarella cheese, Italian seasoning, and salt. Mix well.
  5. Step 5: Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper and spread the broccoli mixture into a round crust about ½ inch thick.
  6. Step 6: Bake for about 15-20 minutes, until golden brown and firm.
  7. Step 7: Add pizza sauce, remaining mozzarella, and other toppings. Bake for an additional 5-7 minutes.
  8. Step 8: Let cool for a couple of minutes before slicing. Top with fresh basil if desired.

Notes

  • Drain the broccoli well after steaming to prevent a soggy crust.
  • Experiment with different cheeses for unique flavors.
  • For a thicker crust, double the recipe and use a larger baking sheet.
