Ingredients
  

For the Pizza:
  • 1 pound pizza dough (homemade or store-bought)
  • 1/4 cup olive oil
  • 1 large bunch broccoli rabe (or broccolini)
  • 1/2 teaspoon crushed red pepper flakes (or more to taste)
  • 2 cloves garlic (minced or grated)
  • 1/3 cup kalamata olives (halved)
  • 1/2 cup fresh basil (finely chopped)
  • 8-10 slices pepperoni (optional)
  • 8 ounces fresh mozzarella cheese
  • 8 ounces fresh burrata cheese
  • salt + pepper to taste

Method
 

Directions:
  1. Start by washing the broccoli rabe thoroughly. Trim the ends and cut the stalks into manageable pieces. In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the minced garlic and red pepper flakes, sautéing for about 30 seconds until fragrant. Then, add the broccoli rabe. Sauté for about 5-7 minutes, or until the greens are tender but still vibrant. Season with salt and pepper to taste. Remove from heat and set aside.
  2. While the broccoli rabe is cooling, preheat your oven to 475°F (245°C). If you’re using a pizza stone, place it in the oven to heat up as well.
  3. On a lightly floured surface, roll out your pizza dough to your desired thickness. Transfer the rolled-out dough onto a baking sheet lined with parchment paper or a preheated pizza stone.
  4. Drizzle the remaining olive oil over the pizza dough. Spread the sautéed broccoli rabe evenly over the top. Scatter kalamata olives, and if you like, pepperoni slices over the broccoli rabe. Tear the fresh mozzarella into pieces and distribute it across the pizza. Finally, add dollops of fresh burrata cheese, allowing it to melt and ooze as it bakes.
  5. Carefully place the pizza in the oven. Bake for about 12-15 minutes, or until the crust is golden brown and the cheese is bubbly.
  6. Once baked, remove the pizza from the oven and let it sit for a couple of minutes. Before slicing, sprinkle the fresh basil over the top for a burst of flavor and color. Cut into slices and serve hot. Enjoy every delicious bite of your Broccoli Rabe Burrata Pizza!
