Ingredients
  

  • 4 cups riced broccoli fresh or frozen
  • 1 large egg binds everything together
  • 1/2 cup shredded cheddar cheese adds a creamy texture

  • 1/2 cup all-purpose flour gives structure to the tots
  • 1/4 cup grated onion adds moisture and flavor
  • 1 clove garlic minced

  • 1/2 teaspoon ground pepper adds a little kick

Method
 

  1. Preheat your oven to 400°F (200°C) for a crispy exterior.
  2. If using fresh broccoli, steam until tender, cool, and rice. If using frozen, thaw and drain.
  3. In a large mixing bowl, combine riced broccoli, egg, cheddar cheese, Parmesan cheese, flour, grated onion, minced garlic, salt, and pepper. Mix until well combined.
  4. Scoop out small portions and shape them into bite-sized tots, squeezing slightly to hold together.
  5. Line a baking sheet with parchment paper, arrange tots in a single layer, and bake for about 20-25 minutes until golden brown and crispy.
  6. Remove from oven, cool slightly, and serve with your favorite dipping sauce.
