Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper or a silicone mat.
In a mixing bowl, combine 1 cup chopped cooked chicken, 1/3 cup melted butter, 1/3 cup hot sauce, 2 teaspoons Worcestershire sauce, 1/4 teaspoon granular garlic, 1/4 cup chopped spring onion, and 1/2 cup shredded mozzarella; stir until evenly mixed.
Divide the 1½ lb pizza dough into golf ball-sized pieces (about 18 pieces). Flatten each piece into a small disk in your palm.
Spoon about a heaping teaspoon of the chicken mixture onto the center of each dough disk, then pinch the edges together to seal and form a ball.
Place the sealed bites seam-side down on the prepared baking sheet, spacing them evenly.
Brush the tops of the bites with 2 tablespoons olive oil, then bake for 20 minutes or until golden brown.
While the bites bake, warm 1 cup light sour cream briefly in the microwave until warm but not hot, about 20–30 seconds.
Stir in 1 cup crumbled blue cheese into the warm sour cream until combined and slightly melted.
Serve the pizza bites warm with the blue cheese dip and garnish with additional chopped green onion or parsley if desired.
