Begin by ensuring your goat cheese log is very cold. This makes it easier to slice into rounds. If your cheese is too soft, it may not hold its shape during cooking.
Using a sharp knife, cut the goat cheese log into ½-inch thick rounds. Place them on a plate and set aside.
In one bowl, beat the two eggs until well combined. In a separate bowl, combine the panko breadcrumbs with seasoned salt. You can also mix in the blue cheese crumble if you’re using it.
Take each slice of goat cheese and dip it first into the beaten eggs, allowing any excess to drip off. Then, coat it thoroughly in the panko breadcrumb mixture, pressing lightly to adhere the crumbs. Repeat this for all the cheese slices.
Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper for easy cleanup. Place the coated goat cheese rounds on the baking sheet, spacing them evenly apart.
Melt the stick of butter and drizzle it over the goat cheese rounds. This will help them achieve that golden-brown color as they bake.
Bake the goat cheese in the preheated oven for about 10-12 minutes, or until they are golden brown and crispy.
In a large mixing bowl, combine the freshly baked goat cheese rounds with Frank’s Red Hot sauce. Gently toss to coat each piece evenly in the sauce.
Plate the Buffalo Oven Fried Goat Cheese on a bed of fresh greens. Drizzle with additional Buffalo sauce if desired, and serve immediately.
