California Chicken Salad

Ingredients
  

  • 3 cups chicken, cooked and cubed or shredded
  • 1/4 cup celery, diced
  • 1 cup red grapes, halved
  • 1/3 cup pecans, chopped
  • 3/4 cup real mayonnaise
  • salt to taste
  • black pepper to taste
  • 4 croissants (for serving, optional)

Method
 

  1. If not already done, cook and cool the chicken, then cube or shred into bite-size pieces.
  2. In a large mixing bowl, combine the chicken, diced celery, halved grapes, and chopped pecans.
  3. Add the mayonnaise and stir until all ingredients are evenly coated.
  4. Season with salt and black pepper to taste, mixing gently to distribute seasoning.
  5. Cover and refrigerate until ready to serve, or spoon onto croissants or into bowls to serve immediately.

Notes

  • Use cooked rotisserie chicken to save time.
  • Adjust mayonnaise amount for desired creaminess.
  • Toast croissants lightly for extra texture.
  • Grapes can be red or green depending on preference.
