Finely chop the carrot into very small pieces and set aside.
Combine peanut butter, whey protein, rolled oats, shredded coconut, ground flax, maple syrup, vanilla, cinnamon, chopped carrot, and a pinch of salt in the bowl of a stand mixer (or a large mixing bowl).
Mix on low to medium speed until the ingredients are fully incorporated and the mixture is even; scrape down the sides and mix briefly again if needed.
Portion the mixture into about 30 small bites using a cookie scoop or tablespoon.
Optional: roll each portion between your palms to smooth; if the mixture is too sticky, refrigerate for 30 minutes first, then roll.
Store the finished bites in an airtight container in the refrigerator.
