Cooking Instructions:
- Remove the strip steaks from the refrigerator and let them come to room temperature for about 30 minutes. Pat them dry with paper towels.
- Sprinkle the kosher salt and freshly ground pepper all over the steaks.
- Place your cast iron skillet over medium-high heat. Add the olive oil and let it heat until shimmering.
- Carefully place the seasoned steaks in the hot skillet. Sear for about 4-5 minutes until a golden-brown crust forms. Flip and sear the other side for another 4-5 minutes.
- Add the butter, minced garlic, and fresh thyme to the skillet when the second side is nearly done. Spoon the melted butter over the steaks.
- Use a meat thermometer to check the internal temperature of the steaks. Remove them from the skillet at your desired doneness.
- Transfer the steaks to a cutting board and let them rest for at least 5 minutes.
- Slice the steaks against the grain and serve immediately, drizzled with the garlic butter.
