Ingredients
  

For the Steak:
  • 4 pieces strip steaks cut 1-1.5 inches thick
  • 3 tablespoons olive oil or more if using an extra-large skillet
  • 2 tablespoons butter
  • 2-3 teaspoons kosher salt
  • 2 teaspoons freshly ground pepper
  • 1 tablespoon fresh thyme finely chopped
  • 4 cloves fresh garlic minced

Method
 

Cooking Instructions:
  1. Remove the strip steaks from the refrigerator and let them come to room temperature for about 30 minutes. Pat them dry with paper towels.
  2. Sprinkle the kosher salt and freshly ground pepper all over the steaks.
  3. Place your cast iron skillet over medium-high heat. Add the olive oil and let it heat until shimmering.
  4. Carefully place the seasoned steaks in the hot skillet. Sear for about 4-5 minutes until a golden-brown crust forms. Flip and sear the other side for another 4-5 minutes.
  5. Add the butter, minced garlic, and fresh thyme to the skillet when the second side is nearly done. Spoon the melted butter over the steaks.
  6. Use a meat thermometer to check the internal temperature of the steaks. Remove them from the skillet at your desired doneness.
  7. Transfer the steaks to a cutting board and let them rest for at least 5 minutes.
  8. Slice the steaks against the grain and serve immediately, drizzled with the garlic butter.

  • Ensure your skillet is hot enough for a perfect sear.
  • Use a meat thermometer to avoid overcooking the steak.
