  • 1 2/3 cups mozzarella cheese low moisture
  • 1/2 cup parmesan cheese grated
  • 2 large eggs

Method
 

Instructions:
  1. Step 1: Preheat your oven to 425°F (220°C) to ensure a crispy crust.
  2. Step 2: Place the chopped cauliflower into a food processor and pulse until it resembles fine rice or crumbs.
  3. Step 3: Transfer the riced cauliflower to a microwave-safe bowl, cover, and microwave on high for about 4-5 minutes until tender.
  4. Step 4: Once cool, place it in a cheesecloth or kitchen towel and squeeze out as much moisture as possible.
  5. Step 5: In a mixing bowl, combine the drained cauliflower, garlic, Italian seasoning, mozzarella, parmesan, and eggs. Stir until well combined.
  6. Step 6: Line a baking sheet with parchment paper and spread the cauliflower mixture into a round pizza shape.
  7. Step 7: Bake for 20-25 minutes until golden brown and firm to the touch.
  8. Step 8: Remove the crust and add your favorite toppings.
  9. Step 9: Return to the oven and bake for an additional 10-15 minutes until the cheese is melted and bubbly.
  10. Step 10: Let cool for a few minutes, slice, and enjoy!
