Instructions
Step 1: Prepare the Polenta - Bring 4 cups of water to a boil in a medium-sized pot. Add a pinch of salt, then gradually whisk in the instant polenta. Cook according to package instructions for about 3–5 minutes until thickened.
Step 2: Flavor the Polenta - Stir in minced garlic, fresh thyme, chives, shredded cheddar cheese, and chopped bacon. Season with salt and pepper to taste.
Step 3: Shape the Polenta Fries - Line a baking sheet with parchment paper. Pour the polenta mixture onto the parchment and spread it out evenly to about ½ inch thickness. Allow to cool for 30 minutes.
Step 4: Cut the Fries - Once set, slice the polenta into fry shapes using a sharp knife or pizza cutter.
Step 5: Bake the Fries - Preheat oven to 425°F (220°C). Transfer fries to the baking sheet, drizzle with olive oil, and season. Bake for 25–30 minutes until golden brown and crispy.
