Ingredients
  

  • 50 pieces Ritz crackers pulsed in a food processor to make coarse crumbs
  • 2/3 cup milk
  • 2 large eggs
  • 1/2 cup mayonnaise
  • 8 slices hearty white sandwich bread
  • 6 slices American cheese
  • Vegetable oil for frying

Method
 

Directions: Cheese Frenchies
  1. In a food processor, pulse the Ritz crackers until you have coarse crumbs. Transfer the crumbs to a shallow dish and set aside.
  2. In a mixing bowl, whisk together the milk, large eggs, and mayonnaise until well combined.
  3. Lay out four slices of the hearty white sandwich bread. Place a slice of American cheese on each piece. Top with another slice of bread to create four sandwiches.
  4. Carefully dip each sandwich into the egg mixture, ensuring both sides are coated.
  5. Press each side of the dipped sandwich into the Ritz cracker crumbs, ensuring they are well coated.
  6. In a skillet or griddle, heat a generous amount of vegetable oil over medium heat.
  7. Once the oil is hot, carefully add the coated sandwiches to the skillet. Fry for 3-4 minutes on each side, or until golden brown and crispy.
  8. Once cooked, transfer the Cheese Frenchies to a plate lined with paper towels to absorb any excess oil. Serve warm with your favorite dipping sauce or enjoy them plain!

Notes

  • For added fiber, use whole grain bread instead of white.
  • Opt for reduced-fat mayonnaise for a lighter version.
